35 Calorie Muffins | VegWeb.com, The World's Largest Collection of Vegetarian Recipes (1)

What you need:

1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup sugar free applesauce
1/2 cup sugar substitute, to taste
1/2 cup water

What you do:

Spray 12 cup muffin tin and preheat oven to 350. Mix flour, soda, cinnamon and salt together. Add applesauce, sugar substitute and water, mix until just blended. Bake at 400 for 10-15 minutes or until tops have lightly browned.
You could make these with soymilk and diced apples and nuts mixed in, but it will alter the calorie content (which is approximate). I have also made these with half a mashed banana instead of applesauce, but again, that alters the calories.

These are wonderful! My alterations to the recipe include: cutting the recipe in half, using a half mashed banana + 1/4 tsp baking powder for the egg sub (instead of the applesauce), light Silk soymilk instead of water, and a half cup of freeze dried strawberries (which I soak briefly to rehydrate). I also add an extra spoonful of the leftover strawberry water to make them a little more moist. They are wonderful. :D Myfitnesspal says this version totals 52 calories (or 49 with just water).

Just made these this morning, GREAT! Has a strange texture though. Otherwise Perfect Muffins =). I had 2 with a 1/2 of a tablespoon of earth balance butter on it. 200 calories in all. 5 stars

How small are these supposed to be?
I lost most of my kitchen supplies one of the zillion times I moved :( and Italy doesn't use the same cooking measures.

I've made these a few times and I love them!! I love to have fruit in mine and add oats to it. (I know that addes up the calories put it's still healthy) So yummy! =D ;)b

These are delicious. A good second attempt at vegan baking. I didn't have a chance to get a vegan sugar substitute, so I just used raw cane sugar, so of course it's more calories but these were quick and easy and worth it. I do want to try putting apple pieces in these next time. Yummmmm yum yum. :)>>>

I plan on making these next week as one of my first fully vegan baked foods. I'm still confused on the flour. I get that bleached white flour is bad, as they take out all the nutrients and then add in ones using animal products. Is unbleached okay? What kind would I be likely to find even not at a health food store? I think I'll use just raw cane sugar this time, even though it adds more calories, just because I know that it's available at the Walmart here. Any tips would be nice. :) I'm looking forward to trying these out.

i am pretty positive bleached flour is vegan...anyone feel free to correct me if i am wrong... it's sugar that has the possibility of not being vegan because it can be filtered through bone char... the reason behind not using bleached flour is health related
